Classic Steamed Vegetables with Mash
When people ask me the inevitable question, “What do you make most with your Thermomix?” my first response is often “vegetables and mash”. Because let’s face it, we are still a ‘meat and three veg’ kind of family!
Something that was missing from the Thermomix Basic Cookbook though, was instructions for this Aussie staple.
In this example I’ve used potatoes, broccoli, squash and carrots. But your mash might include any of the root vegetables, like swede, parsnip or turnip. And the rest of your rainbow might include cauliflower, zucchini, green beans or even corn cobs.
Just remember that when layering your Varoma you should put the largest and most dense vegetables at the bottom. If you need to add something small or delicate (like snow peas) throw them on the Varoma tray and add them just for the final 5 minutes.

- Peel and chop potatoes into 3cm pieces.
- Place into simmering basket with about 800g of water in Thermomix bowl.
- Place your mixed vegetables of choice (all cut in a similar size) into your Varoma dish and tray.
- Cook for 25 minutes/Varoma/speed 2.
- Once cooking is complete remove Varoma and set aside.
- Remove simmering basket and pour off the water.
- Tip potatoes into bowl. Add milk and butter then process 5 seconds/speed 4. Scrape down sides, add more milk if required, then process a further 5 seconds/speed 4.
- If you over-mix, your potatoes will go 'gluey' so always keep an eye on them through the hole in the lid.
- Serve with your choice of protein.
