Mince and Vegetable Pinwheels

You might not know this, but I’ve been packing lunches since about 2010. In fact, before I was a Thermomix consultant, I ran an online store dedicated to litter-free lunchbox products. If you’d ever like some inspo, my Facebook page still exists and has a great back catalogue of photos and lunchbox ideas.

These simple puff pastry pinwheels are one your kids will love! They can be frozen, and if you’d prefer to mix them up with a different type of mince, or vegetables, they’re also pretty forgiving.

And the best bit is, they’re easy for little hands to hold and packed full of goodness!

Preparation

  1. Preheat oven to 200 degrees and line 2 large baking trays with baking paper or Thermomix oven mats. 
  2. Place onion, zucchini, carrot and apple into mixing bowl and chop 6 sec/speed 6 or until finely grated. Transfer into simmering basket lined with paper towel and squeeze to remove excess moisture. 
  3. Add mince, mango chutney, curry powder, breadcrumbs and eggs to mixing bowl along with reserved vegetables and mix 20 seconds/ /speed 4 or until well combined. 
  4. Divide filling into four even portions and spread over each sheet of puff pastry, leaving a 2cm gap on the edge furthest away from you. Ensure the filling reaches all three of the other sides. 
  5. Then, using the blue plastic pastry liner to assist you, roll each piece of pastry and filling into a log. 
  6. Using a serrated knife, slice each log into 1cm slices and transfer to a baking tray lined with baking paper. Sprinkle with sesame seeds. Be sure to leave 2cm gaps, to allow for spreading. 
  7. Bake for 30 minutes or until brown and crisp, then cool on a wire rack.

Notes:

These pinwheels are perfect for lunchboxes. Freeze in a single layer, and defrost overnight in the fridge before popping them into the lunchbox (with a cool brick, of course!)
