Ingredients
Preparation
- Insert simmering basket into Thermomix® bowl. Add 1000g water and heat for 15 min/100°C/speed 2.
- Meanwhile, peel and chop 250g pumpkin into 2cm pieces.
- Place 3 salmon fillets onto Varoma® tray, season with salt and pepper, and set aside.
- Peel and halve 1 brown onion. Cut 1 lemon in half. Chop 5 sprigs parsley for garnish.
- After 15 minutes, check if pumpkin is tender. If not, cook for a few more minutes. Remove simmering basket and set pumpkin aside.
- Through the hole in the lid, add 300g spaghetti to the bowl (leave the hot water inside) and cook for 10 min/Varoma®/speed 1.
- Once the spaghetti has softened and fallen into the bowl, place the Varoma® with salmon into position for the remaining cooking time.
- Remove Varoma® tray and add 150g peas to the Varoma® dish. Return the Varoma® tray with salmon and cook for a further 3 min/Varoma®/speed 1.
- Once cooked, transfer peas and salmon to a large bowl or Thermomix® Server (remove salmon skin if needed).
- Use the Varoma® dish to strain the spaghetti, then transfer spaghetti to the Thermomix® Server with the salmon and peas.
- Place onion into the Thermomix® bowl and chop for 3 sec/speed 5.
- Add 20g extra virgin olive oil and sauté for 3 min/120°C/speed 2.
- Add cooked pumpkin, 1 tbsp vegetable stock paste, 200g pure cream, and the juice of 1/2 lemon. Blend for 30 sec/speed 9.
- Reheat sauce for 1 min/90°C/speed 2.
- Pour the pumpkin cream sauce over the spaghetti and toss to combine. Serve topped with chopped parsley and salt and pepper to taste.
