Ingredients
Preparation
- Insert simmering basket. Weigh in 320g dried pasta of choice and set aside.
- Add 1200g warm water to the mixing bowl and bring to the boil for 8 min/100°C/speed 1. Add an additional 2 minutes if using room temperature water.
- Meanwhile, chop 500g broccoli into florets, slice 3 spring onions and 225g salami. Place into the Varoma® dish.
- After the water has boiled, remove the lid and tip the pasta out of the simmering basket and into the Thermomix® bowl. Place the Varoma® dish with vegetables and salami into position. Cook for 12 min/Varoma®/reverse/speed 1.
- Once the pasta and vegetables are cooked, remove the Varoma® dish (sit the dish on the Varoma® lid to catch drips). Strain the pasta using the simmering basket (reverse straining method), then add pasta to the Varoma® dish.
- Add 60-100g baby spinach and 40-60g basil pesto to the Varoma® dish and stir to combine. Sprinkle with 20g pine nuts and serve.
Notes
You could add other vegetables to this recipe to increase the quantity. Try diced pumpkin, sweet potato, mushrooms, capsicum, eggplant, or sun-dried tomatoes.
