Peanut Butter Cookies
Everyone loves cookies, right?
I came up with this recipe while trying to find a way to use up half a can of sweetened condensed milk. Because you know, I hate waste!
I could have gone for the good old ‘100 cookies’ recipe but decided to switch things up a little.

- Preheat oven to 180 degrees (fan forced) and line 2-3 cookie trays with baking paper, or your Thermomix oven tray liners.
- Weigh 70g of sugar into Thermomix bowl and mill 5 seconds/speed 7.
- Weigh in 180g of butter and cream 20 seconds/speed 4.
- Weigh in 150g of sweetened condensed milk, 130g peanut butter, 250g of self raising flour, 1/4 teaspoon of salt and 40g of chopped peanuts and combine 10 seconds/speed 4.
- Scrape down sides of bowl and combine for a further 5-10 seconds/speed 4.
- Place a small amount of additional chopped peanuts into a bowl or small plate. Then, roll cookie dough into 24 balls and dip one edge of each ball into the nuts.
- Place each ball onto your baking trays, leaving a 5cm gap. Press down gently to flatten cookies into discs.
- Bake for 8-10 minutes, or until just turning golden brown.
- Remove from oven and allow to cool slightly on trays before transferring to a wire rack. Store in an airtight container.
