No bake muesli bars

If you’re looking for a quick and easy recipe that’s sure to please those fuss-pot kids, then these are worth a try. They are suitably sweet, but full of whole oats, seeds and good fats to keep them full for longer.

Please note, I have used almond meal in this recipe, so they might not be lunchbox friendly, depending on your school’s rules. Next time I’ll have a play using seed meal instead, and let you know if I come up with an easy swap!

These would also be suitable to freeze.

Ingredients

Preparation

  1. First, if you don't already have almond meal, place 75g of almonds into your Thermomix® bowl and mill 10 sec/speed 10 and set aside.
  2. Line a 20cm x 30cm slice tin with baking paper.
  3. Then, add butter, sugar and honey to Thermomix® bowl and melt 5 min/100 degrees/speed 2.
  4. Weigh in oats, coconut, pepitas, seeds, almond meal and sultanas and combine 20 sec/speed 3.
  5. Pour mixture into prepared tin and press down firmly and evenly.
  6. Refrigerate for 2 hours, then carefully lift out onto a board and cut into bars, or squares.
