Fruit bowl muffins

We’ve all been there! Apples and bananas left to rot at the bottom of the fruit bowl.

But you have a Thermomix®! And rescuing food is its specialty!

So dig out those apples, pears or bananas (even stone fruit) and give these muffins a go.

Ingredients

Preparation

  1. Preheat oven to 180 degrees. Prepare a 12 hole muffin tin and set aside.
  2. Place 1 apple, cored and 50g dates into the Thermomix® bowl. Chop on 5 sec/speed 8 (or until apple is grated and dates are finely chopped).
  3. Add the bananas and mix on 5 sec/speed 5.
  4. Add 125g coconut oil, 185g milk and 1 egg and mix on 15 sec//speed 5 or until well combined.
  5. Add 20g desiccated coconut, 225g self raising flour and 125g raw sugar and mix 10 sec//speed 4 or until just combined.
  6. Spoon mixture into prepared muffins tin and sprinkle with extra raw sugar. Bake for approximately 20 minutes.

Notes

These are called fruit bowl muffins because they're great for using up sad looking fruit! Try substituting the apple for a pear or even some stone fruit.
