When my blackberry bush is in season and giving us up to a kilo of fresh berries every day, I need to find creative ways to use them! Lots get frozen, others cooked down in syrup and this year I even dehydrated some!

My inspiration for this loaf was a recipe I found on the Laws of the Kitchen blog. Turns out, her version was an adaptation of Shannon Bennett’s original recipe published by Delicious way back in year 2000.

Banana, apple and berry loaf

Ingredients

Preparation

  1. Grease and line a loaf tin (27x11cm) and pre-heat your oven to 180 degrees.
  2. If using raw almonds, begin by making your almond meal. Weigh in 180g raw almonds (or use almond meal) and mill 20 sec/speed 9. Skip the milling step if using ready-made almond meal. Set aside in a large bowl.
  3. Next, chop 2 of the 3 apples (about 180g) 3 sec/speed 5. Set aside with the almond meal.
  4. Without washing the Thermomix® bowl, add 5g vanilla bean paste, 200g butter and 200g raw sugar and mix 30 sec/speed 4. Scrape down bowl and repeat 30 sec/speed 4.
  5. Add 2 bananas (about 120g each) and 3 large eggs and mix 15 sec/speed 4. Scrape down sides.
  6. Add 1 tsp cinnamon, 1/2 tsp ground ginger, 1/2 tsp bicarbonate of soda, 1 tsp baking power, 200g plain flour, 60g milk plus reserved almond meal and apple and mix 45 sec/speed 4. If necessary, scrape down sides and mix again.
  7. Weigh in 125g berries (blueberries, strawberries, blackberries), then stir through using spatula to gently combine.
  8. Pour into prepared loaf tin, arrange extra apple slices over the top, drizzle with honey and a little extra butter then bake at 180 degrees for about 1 1/4 hours (or until a skewer comes out clean).

Unless otherwise stated temperatures are for a fan-forced oven.
