Caramel Appletini
I have a bit of a soft spot for the team from Canberra’s Undergrounds Spirits. Back in 2020, when COVID-19 first shut down our bush capital and we ran into a nationwide shortage of hand sanitiser, it was the team at Underground Spirits who thought outside the box, gathered every last drop of alcohol they could find, and turned it into sanitiser for our community. How clever (and generous!) is that?
Anyway, these guys make amazing gin and although I’m not a huge vodka drinker, I couldn’t go past a bottle of their Vodka Caramel when I went along to one of their tasting events recently. Especially when I heard how well it went in an Espresso Martini!
Today though I’m sharing with you a really sweet and simple cocktail that’s just like a delicious apple pie. Serve it in the afternoon as the light is fading and you’re settling in for the weekend.

Preparation
- Begin by preparing your martini glasses. Rim each glass by dipping into caramel sauce, then raw sugar.
- Then, add 150g ice, 100g vodka and 330g sparkling apple juice to your Thermomix and blitz 5 seconds/speed 5.
- Place simmering basket into Thermomix bowl to trap the ice, then pour into prepared glasses.
- Float a thin slice of apple on top of each glass.
- Enjoy!
