Basmati rice pilaf with fruit and nuts

One of the things I love about our company is that they are always innovating and finding new ways to do things.

When the Rice Cooker mode for the TM6 was launched, I was so keen to see what it could do!

This basmati rice pilaf with fruit and nuts pairs beautifully with a variety of mains. Serve it alongside grilled or roasted meats like Moroccan-spiced lamb, slow-cooked beef, or pan-seared fish. For a vegetarian option, try it with grilled halloumi or spiced tofu.

Add a cooling yoghurt sauce like cucumber raita or harissa yoghurt, or drizzle with tahini dressing. Complete the meal with roasted vegetables, warm flatbread, or a fresh rocket and pomegranate salad.

Ingredients

Preparation

  1. Place simmering basket into Thermomix® bowl and weigh in 200g basmati rice. Rinse thoroughly until water runs clear, then set aside.
  2. Place 1 brown onion (halved) and 2 garlic cloves into Thermomix® bowl and chop for 3 sec/speed 5. Scrape down sides.
  3. Add 40g unsalted butter, 1/2 tsp ground cumin, 1/2 tsp ground turmeric, and 1/4 tsp ground cinnamon. Cook for 4 min/120°C/speed 1.
  4. Add rinsed rice, 1/2 tsp fine salt, and 400g water. Stir to combine, then select Rice Cooker mode. Ensure simmering basket is placed on top of the lid, rather than the measuring cup. The mode should take about 22-25 minutes to complete.
  5. Meanwhile, chop 100g mixed dried fruit and 3 sprigs fresh mint. Once cooked, transfer rice to a serving bowl and stir through dried fruit, almonds, and mint.
