Balsamic fig and apple chutney

I have fond memories of my grandfather’s massive fig tree. Back then though, as a kid, I wasn’t a huge fan of this delicious summer fruit.

Now, as an adult, I’m fortunate to have a fig tree in my own backyard, and when I can keep the birds away, I thoroughly enjoy plucking them straight off the tree and popping them onto a cheese plate or on top of my morning breakfast.

Last summer was a fantastic season for our figs, and so I went to work preserving some to enjoy later.

Ingredients

Preparation

  1. Peel and halve onions, add to Thermomix bowl then chop 3 seconds/speed 5.
  2. Add oil and saute 4 min/120 degrees/speed 1.
  3. Meanwhile, core and quarter apples and dice figs.
  4. Add apples to bowl and chop 3 seconds/speed 5.
  5. Add figs, sugar, balsamic, apple cider vinegar and mixed spice and cook, 45 minutes/Varoma/speed 2 with simmering basket in place of MC.
  6. Sterilise jam jars ready for filling. This recipe will be make about 8 x 150ml jars (1.2L total).
  7. After 45 minutes check consistency. Your chutney should be fairly thick and chunky.
