Apple and Sage Sauce
We love foraging for wild fruit when it’s in season. Roadside apples are our favourite!
It wouldn’t be a summer road trip without loading up a few bags with whatever is ripe along our way.
This apple and sage sauce makes a wonderful addition to roast pork or turkey. I hope you enjoy it!

Preparation
- Place onion into Thermomix bowl and chop 3 seconds/speed 5.
- Add butter and saute 3 min/120 degrees/speed 1.
- Add apples and chop 5 sec/speed 5.
- Cook 5 minutes/100 degrees/speed 3.
- Add apple juice, sugar and sage leaves and cook 10 minutes/100 degrees/speed 2.
- Puree 30 seconds/speed 8 or until smooth.
- Transfer into warm sterilised jars.
- Use within 2 months, or use the waterbath method to increase shelf life to 1 year. Store in refrigerator once opened.
- Will make approx 5 x 150ml jars.

This sauce is perfect to serve with roast pork and makes a wonderful homemade gift.
