Sweet Potato Mini Loaves

One of the awesome things about a Thermomix is how easy is becomes to grate/blend/puree all of the good stuff and (for want of a better word) hide it in everything!
These sweet potato mini loaves are packed full of goodness and taste amazing. If the seeds on top are too green then simply leave them off!
These muffins are perfect for lunchboxes and should be fine in an airtight container at room temperature, for a couple of days.
Also suitable to freeze.

Preparation
- Preheat oven to 180 degrees and prepare a 9 hole mini loaf tin (or 12 cup muffin tray).
- Place sweet potato into simmering basket, add 800g of water and cook 15 minutes/Varoma/speed 2.
- Empty the water. Allow to sweet potato to cool.
- Then, combine sweet potato, sugar, coconut oil, bananas, vanilla and eggs for 5 seconds/speed 4.
- Scrape down sides of bowl. Repeat 5 seconds/speed 4.
- To the bowl add flour, baking soda, baking powder, cinnamon, nutmeg and combine 20 seconds/speed 4.
- Pour into prepared mini loaf or muffin tin and sprinkle with pepitas. Bake at 180 degrees for about 15 minutes, until a skewer comes out clean.
