Miso Salmon with Rice and Vegetables

This is one of those examples of how your Thermomix and traditional methods of cooking can work in perfect harmony. Yes, steaming salmon in your Varoma is wonderful. But sometimes you need the caramelisation and flavour development that comes from oven baking.

In this recipe, you begin by making a simple miso marinade.

Then, your Thermomix goes to work steaming rice and vegetables while your oven takes care of the salmon.

If you own an air fryer, and are only cooking for one or two people, I think you could easily cook your salmon in the air fryer, and reduce the quantity of rice and vegetables by half.

Salmon
  1. Add ginger to mixing bowl and chop 5 Seconds/speed 8. Scrape down sides of bowl and and repeat if necessary. 
  2. Then, add miso paste, mirin, brown sugar, sesame oil and salt and blend 10 Seconds/speed 6. 
  3. Transfer marinade into a baking dish large enough to accomodate your salmon. Place salmon into dish with marinade (skin side up) and place into refrigerator for 30 minutes, or up to 2 hours. 
  4. Meanwhile, preheat oven to 180 degrees and prepare vegetables. 
Vegetables and rice
  1. Without washing bowl, weigh 250g rice into simmering basket and rince well. Add 1000g of water to Thermomix bowl. 
  2. Prepare vegetables, and place into Varoma dish, starting with carrots, then broccoli, then bok choy, then snow peas. 
  3. Once your salmon has time to marinade, flip it over so the skin side is down, spoon over excess marinade, and transfer it to the oven. 
  4. Set your Thermomix timer for 17 minutes/Varoma/speed 3. After about 10 minutes, or once you can see the salmon is almost cooked to your liking, remove it from the oven. Switch oven to grill. Then return salmon to oven until the marinade starts to brown and blister. 
  5. Serve rice, vegetables and salmon sprinkled with a few sesame seeds and sliced spring onions/shallots.
