Impossible Quiche

If you love quiche, but you hate making pastry, then this recipe is for you! Impossible quiche is quite literally the easiest thing in the world to make. I’m still not sure how the flour in this recipes makes it was to the bottom and forms a beautiful crust, but it does!

The beauty of this recipe is that it’s very versatile, and easy to substitute many of the core ingredients.
Don’t have Gruyere? Use cheddar. Don’t have smoked chicken? Use ham. No pumpkin? Sweet potato will do nicely. I’ve even used sour cream instead of normal cream.
Really, as long as your keep the quantities similar, you can use almost anything you like!

To double the recipe, steam vegetables in the Varoma dish instead of the simmering basket and then double all other quantities.

Ingredients

Preparation

  1. Preheat oven to 200 degrees.
  2. Then, start by grating your cheese for 10 seconds/speed 8. Set aside in a bowl.
  3. Place chopped pumpkin and broccoli into simmering basket with 500g of water and steam 8-10 minutes/100 degrees/speed 2 until just tender.
  4. Meanwhile, slice chicken breast and onion and gently fry in olive oil in an oven safe pan. Otherwise, fry in a pan and then transfer to a greased pie dish.
  5. Transfer broccoli and pumpkin into pan/dish with chicken.
  6. Empty water from the Thermomix bowl.
  7. Without washing the bowl, place milk, cream, mustard, flour, eggs and grated cheese into mixing bowl and combine 10 seconds/speed 4.
  8. Pour egg mixture over chicken and vegetables, season with salt and pepper and bake 30 minutes until golden and set.
Tools and equipment
  1. Oven safe, heavy-based frying pan.
  2. Or, frying pan and a baking dish.
