Ingredients

Preparation

  1. Preheat oven to 200°C and line a large baking tray with baking paper.
  2. Use a vegetable peeler to remove the skin from 1 lime and place the peel, plus 2 fresh kaffir lime leaves (optional), and 1 tsp rock salt into Thermomix® bowl. Blitz for 30 sec/speed 10 or until finely ground.
  3. Add 1/4 tsp cayenne pepper, 1/2 tsp dried chilli flakes, juice of 1 lime, and 20g extra virgin olive oil. Add 500g raw cashew nuts and mix for 10 sec/reverse/speed 2 to coat evenly.
  4. Spread cashews evenly onto the prepared baking tray and toast for 10 minutes, stirring halfway through, until lightly browned and dry. Allow to cool completely before storing in an airtight container for up to 2 weeks.
