Apple and cinnamon muffins

These apple and cinnamon muffins are warm, comforting, and perfect for a quick snack or lunchbox treat.

The Thermomix® makes them super easy—no fancy techniques, just simple ingredients and delicious results. Plus, they’re freezer-friendly, so you can stash some away for later (if they last that long!).

Ingredients

Preparation

  1. Preheat oven to 200°C. Grease a 12-hole muffin tin or line with muffin cases.
  2. Place 200g brown sugar and 1 cinnamon stick into the Thermomix® bowl and blitz 5 sec/speed 10.
  3. Place 2 apples, quartered into the Thermomix® bowl and chop 5 sec/speed 4.
  4. Add 115g butter and mix 10 sec/reverse/speed 4.
  5. Add 165g milk, 1 egg, and 1 tsp apple cider vinegar. Mix 10 sec/reverse/speed 4.
  6. Add 300g plain flour, 1 tsp bicarbonate of soda. Mix 10 sec/reverse/speed 4, or until just combined. Do not over mix.
  7. Divide the batter evenly between the muffin cups. Sprinkle with 2 tbsp raw sugar.
  8. Bake for 15-20 minutes, or until dark golden and a skewer inserted in the centre comes out clean. Cool slightly in the tin before transferring to a wire rack.

Notes

These muffins are best eaten warm but also freeze well. Serve them as is, or with a smear of butter for extra indulgence!

If you don't have a cinnamon stick, simply replace with 1 tsp of ground cinnamon.
